With this classic blend, brothers Hansjörg and Matthias Aldinger have created a ‘champagne pirate’. Even the first impression is distinctly Champagnesque: very vinous, with yellow apple, stone fruit and citrus notes, accompanied by typical hints of lees ageing – vanilla, toasted notes, white bread dough and bread crust – all in flawless harmony. It is also beautifully balanced on the palate, driven forward by a vibrant acidity. The mousse is so fine and gentle, adding structure to the experience. An impressive finish.
