As the name suggests, this superb wine is vinified and matured in cement vessels along with the grape skins to give extra texture and structure. It's an intense wine full of flint, lime, and floral licks, rounded out by apricot skin and white peach. There's a background earthiness reminiscent of the cement it rested in. Structural yet lifted and energetic, the long, saline finish showcases ripe apricot. I can see myself enjoying this with a grilled chicken salad.
