Tangy and immediately fresh, this opens with quince and dill before leading into underripe pineapple, squeezed lemon, white flowers and ground ginger. A short maceration in the press lends gentle grip, while malolactic fermentation in steel and frequent bâtonnage on the lees bring rounded fullness and a texture reminiscent of white chocolate. Flint and honey linger on the long finish. Nervy, textural and quietly complex, with the structure to develop further nuance over the next five years. Josetta Saffirio champions biodiversity, guided by a firm belief in having as little impact on the land as possible.
