Cava d'Onice’s classic Brunello is assembled from disparate estate plots with varying exposures, altitudes and soils. I have a slight preference for this over the sinewy and more austere single-vineyard Colombaio bottling in 2021. While brawny and structured, Sensis is balanced out by a sweetness and fleshiness of dark red cherry. Damp earth, bitter roots and fresh mint lend intriguing territorial elements. The dense tannins relent somewhat on the finish, allowing piercing acidity to highlight the radiant flavours. Hands off for the next year or so.
