A selection of Sangiovese from estate vineyards harvested at full ripeness, Cavaliere ferments in 30hl non-vitrified concrete vats with 30% whole clusters. The maceration can last until January of the following year. Smoky woodland notes with ripe raspberry, rose and a touch of leather lead to a fresh, balanced, chewy palate with fierce, bony tannins. Tight, crisp and dusty on the finish, this is a gourmet wine to approach in a couple of years.
