Mormoraia is owned by the Passoni family, originally from Milan, now in its third generation here. One-third of the 100-hectare estate is vineyard. The smart, mainly barrel-aged red wines use Rhone and Bordeaux grapes, but oak is only used on some of the Vernaccia wines like the excellent Ostrea, so-named for oyster shells left by prehistoric seas. It ferments in stainless steel and ages for six months in steel and oak, creating a very versatile, fresh-fruited, creamy and moreish white.
