Ginevra Venerosi Pesciolini's Mimesi is a Vermentino from limestone soils in Terre di Pisa which, following 72 hours of skin-contact and vinification in stainless steel, spends five months on its lees in large terracotta amphorae. It has a beautiful bronzed colour, with scents redolent of stewed apple, citrus peel and a waft of herbs. In the mouth it has a soft, creamy texture countered by saline acidity and a bright intensity of sapid green apple with hints of cinnamon and crunchy demerara sweetness, followed on the long, fresh finish by pithy pink grapefruit, aromatic citrus peel and jasmine. Deliciously different and complex.
