Cosimo Bojola, who is just completing his oenology studies, crafted this wine for his final thesis. It's 100% Sangiovese vinified in locally-made unlined amphorae and left on the skins for 11 months. I tried this prior to learning anything about the vinification and would say that Bojola has achieved his goal, which was to bring out varietal aromas and a mineral character while reducing the herbaceous astringency associated which tank vinifications. 

The nose is elegant and clean, with aromas of pure cherry, pomegranate and red currants. It's light on its feet with no hard edges and is absolutely juicy - a delightful Chianti Classico for drinking now.
