This interesting sparkler from Prosecco producer, Bottega is a metodo ancestrale (AKA pét-nat) made with Glera plus a small portion of Moscato. Fermentation completes in the bottle, and there's no disgorgement so you're left with a slight sediment, which will help to preserve this wine for a number of years. Aromas of citrus peel, apple and some yellow fruits, along with a hint of doughiness, lead to a very dry palate with a luxurious mousse. Steely, saline flavours mingle with touches of pear, white peach, cream and apricot skin. Best with food.
