Crunchy and crystalline with grapefruit, elderflower, freshly mown hay, jalapeno, pineapple, lime zest and basil. There's a cool fruitiness and silky palate with some nice pithiness to the finish. No shortage of raspy acidity here, but there’s good concentration and texture to support; dry and saline and quite elegant. Made with Sauvignon Blanc from two vineyards in North Canterbury, wild ferment in 70% concrete tulips, 22% older barrels, with 8% skin contact and 100% malalactic fermentation; held on lees for six months before bottling.
