Almost a classic Bordeaux blend (8% Tempranillo sneaks into the mix) from Elephant Hill’s Gimblett and Bridge Pa Triangle vineyards, Hieronymus is the winery’s top-tier red blend. Grapes were fermented in large oak then drained to barrels (50% new French oak) where the wine spent 26 months ageing. Ribena and mint jump from the glass and a medicinal note continues on the long palate where the concentrated blackberry fruit is wrapped in a silky blanket of dried herbs.
