Around 50% of the fruit is wild-fermented in old barrels, giving additional richness and complexity to the waxy, honeyed lanolin scents and viscous apricot, orange and sweet citrus flavours. The 105g/l of residual sugar is balanced well by the acidity, making it quite an accessible sweet wine. It finishes with some honeycomb, marmalade and floral lift.
