Crafted by Poland's traditional-method sparkling wine pioneer Guillaume Dubois, a French winemaker of Polish descent. This bottling spent three years on lees, exuding a rich, honeyed nose of red apple with touches of pastry. Frothy on the palate, with splendid acidity piercing through (no malolactic fermentation), alongside salted citrus, minerality and razor-sharp focus. The finish is zesty and clean.
