Pedro Ribeiro and Catarina Vieira from Herdade do Rocim in Alentejo, Portugal, not only make wines in amphora, but they also import amphora wines from other countries, such is their passion for the genre. 'In the beginning, we made a small amount of wine in amphora, here called talhas, to keep the tradition. In 2010 our American importer tasted the wine and was overwhelmed - that's how it all started,' says Ribeiro. Herdade do Rocim makes a white wine simply called Amphora, made from Antão Vaz, Perrum and Roupeiro that grow on granite and schist soil. It's naturally fermented on the skins for two weeks in talha without temperature control, additions or correction of must, and the wine then ages for three months in bottle. Light and refreshing without being superficial, it has distinct and pleasant aromas of citrus, fresh green apples and sage, with a vertical shape in the mouth and mouthwatering steely-lemony acidity. A wine to drink on its own or to pair with fish dishes.
