This pale garnet Negra Mole is intensely spicy with an iodine/clay edge to its smooth redcurrant and berry fruit, plus involving, slightly vegetal, chamois tannins. It is fermented on skins in stainless steel, with a one-month maceration, and pressed to 750-litre terracotta amphorae, where it is aged for seven months.
