A blend of Viognier (37%), Roussanne (27%), Semillon (22%), and Verdelho (14%), the grapes were layered one on top of the other and fermented on their skins in an old wooden vat until dry – for 40 days and 40 nights, inspired by the Book of Genesis. Preserved lemon, nuts and quince aromas lead to a palate of stone fruit and spice, waxy yellow apple and gentle tug of phenolics on the finish. Joyous!
