This estate made its first Cap Classiques under cellarmaster Charles Hopkins in 2007. Always a Chardonnay-dominant cuvée, this vintage is 64%, and just 2,000 cases were made. It goes through full malo, giving good texture and roundness to the palate, while the 15 months on lees adds gentle brioche notes. The dosage is a low 5.5%, retaining the lovely grapefruit, lime and crisp apple freshness.
