We love this wine during fermentation; strawberry, cherry and pomegranate perfume the entire cellar,' says winemaker Eben Sadie. An enticing translucent bright red hue, all that fruit is there, lifted with an ethereal floral note. Only concrete is used for fermentation and ageing, 60% whole cluster, with 30 days on the skins before basket-pressing back into concrete for a year’s rest. A core of round, soft plummy fruit is encased in a dry cradle of tannins; freshness ribbons through emphatically, with subtle earthy tones and lines of delicate spice.
