Made from a vineyard of 400 plants created as part of Vinpro’s GEN-Z project, this young-vine Vermentino is about as cutting edge as it gets. The aromatics are varietally spot on: chicken stock, ripe pears, a touch of lemon zest and fresh Mediterranean herbs. It’s relatively light in body but firm in texture, and displays the signature saltiness that characterises the vines from much of the Atlantic-exposed West Coast, revealing a note of brine and olive on the finish. One part of the fruit is whole-bunch pressed, while the second part gets 12 hours on the skins to build texture. Fermented using wild yeasts and racked into a single 300-litre barrel for four months ageing with regular stirring of the lees.
