Take one forgotten old plot of the once-popular (in Stellenbosch) blending variety Clairette Blanche; add an Australian/South African winemaking couple; skin ferment 65% of the blend for two weeks and barrel ferment the rest. Combine to achieve a tightly wound, nervy creature with bright citrus peel, some chalky texture and a delicately salty finish. The 2017 was equally assured, but much fatter and more lees-influenced.
