De Morgenzon is a specialist in Chenin Blanc, hence this Cap Classique is one of the few made exclusively from this variety. It ferments partially in oak and spends 24 months on lees. Much of Chenin's personality is shown, with intense notes of lanolin, candlewax, honey and quince on the nose. The palate has a similar waxy note and a subtle edge of apple pip bitterness, the mousse accentuating the citrus focus and the full-flavoured mid-palate of the wine, which was harvested at different levels of ripeness to achieve both freshness and full fruit flavour.
