Resonant struck-match, like the chime of a bell, floats above creamy apple custard, baked quince, yellow peaches and a leesy richness that’s like salty pastry with an undertow of nuts and cream. On the palate this decadence is nipped and tucked with a vibrant acidity, a playful tension counterbalancing the generosity of fruit. Wild fermented then matured in older 225L barrels for a total of 11 months adds another layer of texture to the concentrated nature of the old-vine fruit, planted in 1985 and 1989.
