The nose is still slightly reductive, but evolution is evident in the nose of molten candle wax. The richer, riper fruit is expressed as yellow plum and creamy yellow apple. The body is smooth, with emollient foam and a beautiful backbone of lemon acidity. There is much energy, real verve and rounded creaminess. A very gastronomic Cap Classique with the potential to age further. Just 6,670 bottles of this prestige cuvée were made in 2009. It was the last year that fruit was sourced from both Stellenbosch and the Western Cape. Made from 100% Chardonnay without malolactic fermentation, this was aged for six years 'sur latte' – on its side with much lees contact – and a further four years 'sur pointe', meaning reduced lees contact.
