Graham Beck's absolute prestige bottling is not made to a recipe. The 2017 iteration is from a special block of estate Chardonnay which was oak fermented, a smaller portion of Chardonnay from Darling and some Pinot Noir from Durbanville. It's a class act that has a striking tautness, offering subtle notes of Seville orange on the nose while a precise, concentrated body is sleek with lemon and white pepper. The mousse is ultra-fine, and it shows its autolysis with a hint of maize meal. Linear and strait-laced, its low dosage of 3.3g/L only underlines its essential raciness. This is sleek and bright now but will hit its stride with another year of bottle age. Exquisite.
