Kleine Zalze only makes a vintage-dated Cap Classique in great years and allows it to age for three years on lees. The fruit was sourced mostly from Robertson and supplemented with Stellenbosch. The nose opens with generous apple and butter and the palate is just as fruity. Lemon and green apple brim with freshness and gentle foam. This strikes a lovely balance and comes with remarkable focus and a real sense of chalk on the finish.
