However, here in the Sierras it achieves full ripeness while retaining freshness. Grapes are fully destemmed to avoid green characters. Also seek out the small-production Tadeo Tinaja: unoaked and aged in amphora for a year, it’s a gloriously pure expression of the variety. Organic.
