A week’s maceration with skin and ageing for nine months in tinajas (clay jars). Old-vine Palomino from a single vineyard in pago Mahina, Sanlúcar. A nose of orange-blossom honey, ripe citrus and dried nectarine. The palate is intensely saline with ripe stone fruit, and citrus zest counterbalanced by sea salt and almond. A touch of volatility gives lift.
