Syrah grown using organic and biodynamic methods in two vineyards on llicorella and clay soils. The fruit is foot-trodden in 1,000L open vats to allow for regular batonnage during the initial, spontaneous fermentation, which is then completed in stainless steel. The wine is racked into terracotta amphorae where it rests for 10 months before bottling without filtration and minimal use of sulphur. Beth Willard: Pure fruity nose with raspberry, red cherry, wet stone. On the palate there’s dark chocolate, bitter herbs and black cherry. Silky tannin. Some mocha and spicy notes to finish with lovely texture, grippy. Diana Rollan: Deep and concentrated with meaty, smoky and black pepper character. Big and bold with pronounced drying tannins, notes of plum compote, black pepper and baking spices. David Williams: Super-fragrant, with violets and a gamey-meaty savouriness; vivid in flavour, tightly packed tannin and dark wildness on the palate. Dark berries and plenty of energy: this is untamed!
