Flinty, crisp and delicately herbal on the nose; this already has so much poise and purity to the fresh, citric fruit profile. On the palate the acidity builds in a slow crescendo, driving the crystalline flavours into a long finish, where the tell-tale, spicy hint of fennel opens up. Certified organic, aged for eight months in fourth- and fifth-use, 300-litre French oak barrels. Absolutely delicious.
