Jerez’s signature Sherry grape Palomino gets a new lease of life as this savoury, spicy orange wine. Cidery, cooked apple aromas, with a hint of warming cinnamon. On the palate it’s lighter, with bright acidity and a touch of salinity at the end. Fermentation with skins and stems gives a nice bite of tannin and ageing in Sherry casks with flor adds a layer of yeasty complexity.
