Cerrón’s La Servil cuvée comes from old Monastrell vines grown at 960m on limestone soils, and it's aged for 18 months in old 5,000-litre Austrian foudres. It is a pretty wine with aromas of rose petal, talc and bright red cherry that give way to a delightful palate with a chalky texture. The wine is marked by high energy and vibrancy, making this a wonderfully lively and fruit-forward interpretation of the variety. Biodynamic.
