A touch of volatile acidity on opening lifts yellow apple, apple blossom and white flowers, with a clear stony note running through the nose. A light smoky reduction is beginning to show – charred lemon, underripe white peach and nectarine – alongside lime blossom, fresh lime peel and raw almond. The palate is bracingly fresh, driven by electric, puckering acidity that persists like freshly squeezed lime, creating real tension and a mouthfeel that sits between rounded and vertical – taut, not severe. White pepper and oregano-like bitters add savoury detail, with pithy lemon zest lingering on the finish. Slightly saline, with a strong sense of purity and terroir. Peppy and precise. 100% Xarel.lo, vinified in glass.
