Drawn exclusively from the estate’s Selvenen vineyard, the grapes are entirely destemmed before classical fermentation. The cooler 2021 was matured for 12 months in 100% new French oak and exudes dark cherry, wild forest berries and clove, with a subtle dance of smoke. The palate balances density with fine, silky tannins and measured power. The memorable finish reveals signature minerality. Each label bears portraits of the Donatsch team, including the late Thomas Donatsch.
