A cool first ferment and up to two years on its lees for this blend of 50% Seyval Blanc with Chardonnay and Pinot Noir has given this wine aromas of dried white flowers such as honeysuckle and daisies. The soft, pillowy mousse liberates lemon-cream flavours, sweetly spiced with cinnamon and star-anise on a fine, silky palate of good concentration. Complexity is added by the silhouette of savoury creamed cobnuts.
