This traditional method Blanc de Blanc was sourced from the producer’s south-facing Kit’s Coty vineyard in the North Downs. In 2015 the site saw late budburst and flowering, followed by a sunny but cool summer and a warm harvest season. It has a complex nose of wheat crackers, fresh citrus, green apple and a touch of sourdough. Crisp but ripe apple and tangerine fruits on the palate with a savoury, yeasty twist, rounded by creamy brioche and butter from four years of lees aging. The base wine has undergone malolactic fermentation and partial barrel aging before second fermentation, which has given it a smooth texture and more depth of flavour. A moreish, buttery finish lingers on.
