Exton’s chalk-based Hampshire soils, along with winemaker Corinne Seely’s preference for little or no malolactic fermentation, make for a natural tension and tautness in these wines when young. With the benefit of age, however, this wine has developed rich truffle notes and a creamy texture to complement its core of intense lemon acidity.
