100% Chardonnay from the original home vineyard at Ridgeview. A blend of 2017, 2016 and 2015 vintages, part aged in oak and aged on the lees for 10-11 months. Dosage: 3.25g/L. There's a hint of gold in the glass – it's there, but it's not deep, an indication of the style – definitely but not heavily oaked. This is quite Burgundian in character, with fairly rich aromas of toffee popcorn and butterscotch, a spiciness from the oak, some white flowers, and a weight of fresh lemon citrus fruit. Textural, with a good purity of fruit alongside the seasoning of oak. It feels quite luxurious as a sparkling wine, and would be a great match for game. A perfect autumn / winter sparkling wine for special occasions.
