Immediately attractive, showing a nose of golden apple pastry, acacia blossom and creamy toast, underlined by the red cherry sweetness of 100% Pinot Noir. Fermented with indigenous yeast in used French oak and aged on lees for 10 months. After bottling, the Blanc de Noirs spent a further 20 months on lees in bottle. Zingy lime brightness and generous mousse form the first impression on the palate, followed by brioche, lemon pith and red apple peel. Saline in tone, lifted and vibrant, leading to a nutty hint on the cleansing finish.
