Named for the white oyster fossils found in the calcium-rich soils of the estate Margarita Vineyard, Oyster Ridge offers a dark, brooding expression of Paso Cabernet Sauvignon. The nose is saturated with candied black fruit, particularly plums and prunes. The palate follows suit, delivering the same dark fruits, plus cinnamon stick, toasted oak and dark chocolate. Bright acidity provides welcome lift, while surprisingly restrained tannins keep the wine balanced, plush and relatively approachable. Malbec and Merlot fill out the blend.
