The wine opens with rich aromas of sea spray, minerality, and candied lemon peel, joined by honeyed almonds and baked orchard fruit. On the palate, it is creamy and expansive, revealing candied ginger, quince and tremendous length. The finish is exceptionally long and saline, nailing the hallmark minerality of the region. Layered and balanced, it offers both richness and taut energy in equal measure. Mt. Eden clone from Bien Nacido and Wente clone from North Canyon, picked early in the morning, are cold-settled and gravity-racked into 500-litre puncheons (40% new). Barrels are filled to the top, and careful temperature management allows native yeasts to initiate fermentation, which takes about six weeks in the cold cellar. The wine remains in these barrels, goes through malolactic fermentation and ages for around 20 months before spending a further couple of months in stainless steel prior to bottling. It is bottled unfined and unfiltered. Picks usually occur in the last days of August or the very first days of September.
