A really fun wine. Laser bright with lots of grip. Tropical lychee, stone fruit and citrus, cheese rind, and a Chablis-like minerality. Winemaker Meghan Zorbeck presses the grapes and creates a ‘tea bag’ of grape skins (from cheesecloth), drops the ‘tea bag’ into amphora, and then presses it off to concrete and stainless steel. All native yeast fermented, no additions. 250 cases made.
