Organically farmed Gamay Noir from Arroyo Seco’s Zabala Vineyard was fermented in stainless steel with 20% whole clusters using native yeast. Aged in neutral French oak with minimal sulphur additions, the wine was bottled unfiltered and unfined. Bright, crunchy red berry fruit, redolent of cherry and strawberry, is dusted with cocoa powder and grapefruit zest. Zesty, tingling acidity carries the light-to-medium-bodied finish. Best served chilled, it pairs beautifully with salads dressed in a tangy vinaigrette or enjoyed well chilled alongside strawberry panna cotta. The winery was founded by winemaker Charlie Gilmore in 2018.
