From the 3-hectare Volcanic Hill single vineyard, this 100% Cabernet Sauvignon is fermented in small open-top fermenters, followed by a cold soak and gentle extraction of up to 21 days on skins. The wine is aged for 20 months in nearly 75% new French oak and then held for a further year in the bottle before release. Winemaker Graham Wehmeier notes that harvesting began during the heatwave, and while this is not the boldest or darkest expression of the site as it often is, there remains real firmness to the tannins, coupled with an underlying integrity that suggests they will resolve beautifully over another five to seven years in bottle. For now, this is the most tightly coiled wine in the 2022 portfolio, a wine to cellar and allow to mellow and unfurl with time. One 2022 well worth holding onto.
