Such a pretty nose of citrus—lemon, kumquat, and nougat leads into a palate where the mousse is incredibly assertive, driven by racing saline–mineral tension and a candied mineral clarity. Cherry blossom and lime blossom lift the baked pastry fruit on the palate, while a thread of racy acidity keeps the wine brilliantly bright, crisp, and full of energy. A lovely showing from the 2017 vintage, with a pH of 3.1, total acidity at 0.80 g/100 ml, and a dosage of 0.8%, delivering precision and verve in equal measure. Crafted using the méthode traditionnelle, with a minimum of six years ageing en tirage.
