The Cabernet bears a wonderful earthy richness, with dark red berries, perfectly ripe blackberry and black cherry, savory cedarwood spices and a hint of hoisin. The blue-black fruit is balanced by ripe and round tannins and good mineral intensity. Kale Anderson and Jane Jiang have been making Cabernet from Skellenger Vineyard’s Oakville Clone 4 plantings since 2016, fermenting it in open-top tanks and aging it for 20 months in 60% new French oak.
