This 100% Sauvignon Blanc is whole-cluster pressed and aged sur lie for 11 months in 30% new French oak. ‘Going for textural but fresh and full of verve,’ says winemaker Avery Heelan. Enticing aromatics of lychee and honeysuckle mingle with lemon zest and crushed Marcona almonds. Barrel fermentation and sur-lie ageing lend the wine a lovely tactile richness, balanced by crisp, crunchy acidity and subtle apple-skin tannins. More floral tones emerge—chamomile in particular—yet the wine stays super crisp and juicy all the way through.
