Whole-cluster pressed, cold settled, and fermented and aged in Burgundy-style French oak barrels for approximately 16 months (55% new French oak), with extended ageing sur lie and partial malolactic fermentation. The site sits just off Occidental Road in a sheltered bowl surrounded by trees, where disease pressure requires vigilant management, yet it produces a wine of striking brightness and candied mineral acidity. Lime-driven freshness meets Asian spices and white pepper, all elevated and finely etched, with a long mid-palate thread of those same spices carrying through to the juicy, refreshing finish.
