The wine is made by Joe Harden of Nickel & Nickel fame, drawing on fruit from Lucky Well (La Tâche clone), prized for its floral lift, red-fruited finesse and savoury spice, alongside King’s Ridge, from the Calera-planted section of the site. Fermented with 20% whole clusters, it is aged for 12 months in 30% new French oak, with native yeast and malolactic fermentations, and bottled unfined and unfiltered. Ones by Sabonis is a brand launched in 2021 by NBA All-Star Domantas Sabonis and his wife, Shashana Sabonis, with its first commercial release in 2022. The portfolio has since expanded steadily. The wine is expressive and layered, showing dark cherry and blackberry fruit framed by a rich lattice of chalky tannins and a subtle apple-skin grip. Red berry fruit and savoury spice emerge through the mid-palate, leading to a long, saline, crushed-stone finish with hints of emerging brown spice. There is plenty of tension and chew to the tannins, giving this wine the structure to stand up confidently to a wide range of cuisines, from roast chicken to Wagyu beef fillet.
