This Ovis white –&nbsp;barrel-fermented and aged in French oak for 10 months – is crafted by consultant Philippe Melka, who has the Midas touch when it comes to Sauvignon Blanc. The aromas waver between exotic tropical fruit notes and lovely oak spices, with a hint of wet stone minerality. On the attack, the wine has a generosity of plush orchard fruit, a hint of dried apricot and an underpinning of candied peach rings. Saline acidity keeps everything bright and lifted, and at 13.5% alcohol, you can crush two bottles in one sitting. Highly recommended!
