From the Adelaida District of Paso Robles, this 2019 Cabernet Sauvignon from Pius Estate is a notch above the 2018 in terms of richness and intensity, yet it shows greater polish and poise. The wine delivers plump, full-bodied, silky tannins with fine grain, alongside ripe black berry fruit, scorched wild herbs, and intense loamy earth. It carries all the weight and density one would expect, yet remains remarkably light on its feet through the full-flavoured, rich finish. It will be fascinating to track both the 2018 and 2019 side by side over the next decade—if you can resist the temptation and enjoy them a few bottles at a time. Crafted by Anthony Versochi’s who worked for more than a decade at Daou Estate.
